Chemical Composition of Minor Millets

Abstract


The chemical composition of five commonly consumed minor millets of Karnataka was screened. There was a significant variation with respect to total carbonhydrates and tannin among millets. However,no such variation was observed in protein content. The minor millets were good sources of ash and crude fibre. Tannin was found to be very high in kodo millet. On the other hand, proso millet and Italian millet contained good amount of calcium
